Hi Jeanne - this looks really lovely! I had a quinoa salad at Ottolenghi the other day and really liked it, but can't seem to find quinoa around here - do you think I can use bulgur instead? I'm not really a couscous fan...

Hi Keiko
I have a box of quinoa in my cupboard and have never made it!! Shame on me! But judging by looks I would say that bulgur and quinoa should be good substitutes. I also prefer bulgur over couscous - more body to it.
